gin, lemon juice, lime juice, simple syrup, heavy cream, egg white, orange flower water, soda water

Created by Henry C. Ramos in 1888 in New Orleans. Bartenders would pass the shaker down a line of staff to achieve the perfect 12-minute shake.

Instructions

Dry shake all ingredients (except soda) vigorously for 1–2 minutes to emulsify. Add ice and shake hard again for 30 seconds. Strain into a chilled highball glass. Slowly top with soda while gently stirring to create the signature foam head.
