Created by Henry C. Ramos in 1888 in New Orleans. Bartenders would pass the shaker down a line of staff to achieve the perfect 12-minute shake.
Ingredients
- gin 2 oz
- lemon juice 0.5 oz
- lime juice 0.5 oz
- simple syrup 1 oz
- heavy cream 1 oz
- egg white 1
- orange flower water 3 dashes
- soda water top
Instructions
Dry shake all ingredients (except soda) vigorously for 1–2 minutes to emulsify. Add ice and shake hard again for 30 seconds. Strain into a chilled highball glass. Slowly top with soda while gently stirring to create the signature foam head.
